Raw Vegan Recipe: Cacao Almond Fudgy Bars

Is this an everyday treat?

It depends on you.

For me, this is more of a special occasion treat to enjoy myself and share with friends and family.

But if you are coming from an everyday-bar-of-chocolate habit (that was me once, too!), this might be a good substitution for you.

Regardless, listen to your body and enjoy!

Here’s the recipe!

Ingredients:

  • 1/2 cup almond butter
  • 15 medjool dates, pitted
  • 1/4 cup cacao butter, melted*
  • 1/4 cup cacao powder*
  • 1-2 tbsp cacao nibs
  • *Double the cacao butter and powder if you want a more chocolate-y treat (AKA me!). With this much chocolate, I’d advise you to pour half as the first layer (freeze for 30 min), then layer the date-almond dough, then pour the other half as the top layer. Make sure to use wax paper!!

Process:

1. In a food processor, blend the almond butter and dates until smooth and oily.
 
2. Line a rectangular or square glass dish with wax paper (I’m not kidding…DO THIS! It will make serving so much easier). Press dough into the bottom. Place in freezer to set.
 
3. Melt 1/4 cup cacao butter (I did this in my dehydrator set at 115 degrees). Stir in 1/4 cup cacao powder.
 
4. Spread raw chocolate atop almond butter-date dough. Sprinkle with cacao nibs. Place in freezer for an hour or more to set.
 
5. Remove from freezer and cut into bite-sized pieces or bars. Serve immediately. The bars will get gooey as they sit, and the chocolate will melt.
 
6. Store in freezer. You can move to fridge 30 minutes before serving.
 

Tips For Your Dosha!

Vata – Use carob powder and carob nibs if you are sensitive to the bitter taste and stimulating action of cacao. Nourishing healthy fats from almond butter and cacao butter harmonize with the sweet taste of dates.
 
Pitta – Be mindful of the fat-sugar combination. See how you do. The cooling temperature of the bars works for you. Cacao is an excellent bitter taste for you. Almonds and dates soothe pitta also.
 
Kapha – Be especially mindful of the fat-sugar combination. If you are prediabetic or diabetic, this may not be the best choice for you. Almonds work for you. Cacao is an excellent bitter taste for you that will help energize and get you moving!
